This is one of my go to meals and it is super easy to make! All you do is cut the zucchini into thin slices and enjoy basically! Zucchinis are low carb and low calorie, who doesn’t want a low carb pasta? ;)
Pesto Zucchini Noodles
Ingredients
- 2 zucchini's
- 1 tbsp. raw vegan pesto
- handful of cherry tomatoes
- himalayan pink salt
- pepper
- garlic powder
Instructions
- cut the zucchinis into thin strips
- toss into a pan with the tomatoes and spices
- add the pesto
- cook until soft
Feel free to add tofu, fish or chicken!
