Garlic Shrimp & Veggies

This lunch or dinner is super healthy and super light! It seriously takes 5 minutes & all you need is shrimp, kale and artichokes! Eating healthy can be super simple and fast. A lot of people DM me, even friends text me, saying they want to eat healthy but don’t know what to eat or don’t have time… IT IS SIMPLE! Eat real food, real ingredients and no added sugars and junk! Also eating healthy really isn’t time consuming. Grill some chicken/fish/veggies and throw them in the fridge for a few days and BOOM you have grab and go meals for days!

Garlic Shrimp & Veggies

Serves: 2

Ingredients

  • 1 tsp coconut oil or ghee butter
  • shrimp
  • 2 handfuls of kale
  • garlic cloves
  • capers
  • artichoke hearts
  • pepper

Instructions

  1. Put the tsp of coconut oil or ghee in a pan and let melt.
  2. Add the kale & cook until soft.
  3. Chop garlic cloves & add to kale.
  4. Add capers.
  5. Add artichoke hearts.
  6. Add thawed shrimp.
  7. Dash on some pepper.
